PUNJABI RECIPES AND THEIR SPECIALTIES

The Punjabi recipes have become very famous all over India because Punjabis have established their restaurants in many places in different Indian states. Unlike many North Indians who take only vegetarian foods, Punjabi recipes have both non-vegetarian items and vegetarian items. The rural people of Punjab work hard in fields and burn up more calories. The Punjabi foods are based on this. You can see liberal usage of butter, cream and ghee that are rich in calories in Punjabi recipes. Other main ingredients are rice and whole wheat.

 

The Punjabi recipes vary region wise. For example people of Amritsar make stuffed naans and consume more dairy products. There are some Punjabi recipes that are exclusively meant to Punjab and cannot be seen in other regions of India such as saran da saag. Onion, garlic and ginger are the main masala items used. Punjabi cuisine is famous for its tandoor varieties and dishes made of paneer.

 

Some of the Punjabi recipes are aloo amritsari, jeera rice, chicken methi, hariyali tikki, makai ki roti, khoya matar, sabji pulao, rajma, paneer kabab, peshawari channa, murg makai, Punjabi kadhi, achari paneer, aam ka achaar, mughlai dahi balla, Punjabi Wadi, kabuli rice, murg chat, dhania panjiri, tandoori corn, saag, methid ki missil roti, cheese corn tikki, etc.

 

Punjabi pickles and chutneys are dum aloo, mango pickle, carrot pickle, coconut chutney, etc. Punjabi vegetarian recipes are saag, dahl, matter paneer and non-vegetarian recipes are lemon chicken drumsticks, tandoori chicken, chicken curry, saag gosht, seyal kadai gosht, etc.

 

The Punjabi recipe Rao ki Kheer is very famous and is prepared during winter. Rice is cooked in sugar cane juice for a long time and is delicious to taste. Different types of Indian breads like naan, roti, lachcha parathas are made in Punjabi Dhaba with tandoor stoves. Makke Ki roti, Baajri ki roti and Jowar ki roti are also made with tawa.

 

The Punjabi recipes like dal makhani, dal Amritsari, malai kofta, rajma and sarson da saag are made with vegetables, lentils and pulses. They are the perfect side dishes for the roti varieties. The Punjabi recipes are prepared by roasting, barbecuing and deep frying. Puris and bhaturas are made by frying in oil.

 

Tandoori chicken, sheikh kabab, tikka varieties like chicken tikka, paneer tikka and malai tikka are prepared in tandoor hobs. Jeera Chawal is the cumin rice that is served along with the rajma prepared with beans. Dahi or curd has an important part in the Punjabi recipes.

 

Achars or pickles are made in many types like gajar shalgam gobi, kala nimbu, aam ka achaar, mixed vegetable achar, etc. Onion and curd are mixed and green chilly or hot pepper and coriander leaves are added to get onion salad which is the perfect side dish of hot Punjabi recipes. Lassi is liked by people of Punjab and this is prepared by whipping the yoghurt and mixing sugar to it. Usually this is served chill. The rich and delicious dessert of Punjab is Kheer. This is made with different combinations and is sweet to taste.
