However you should add masala items in very little quantity when compared to that used in non-veg foods. Grated coconut is added in the end to get nice flavor. If you want to add color to the cooked vegetables you can use natural colorings like turmeric powder. If you fry any vegetable after cooking till it turns slightly brown, you will get a different good taste.
