NORTH INDIAN RECIPES AND THEIR TYPES

 

The North Indian recipes are centered on wheat and wheat based foods for the main course and sabji or vegetables for the side dish. The wheat is not used as it is but ground to fine flour and sieved to use in a number of delicious North Indian recipes. The North Indian recipes can yet be divided based on the region like Mughlai recipes, Punjabi recipes, Sindhi recipes, Rajasthani recipes, Hyderabadi recipes, Jain recipes, Kashmiri recipes, Gujarati recipes and Parsi recipes.

 

The Mughlai cuisine is very famous and has Delhi as its center. This traditional cooking is handed over from the time of Mughals who ruled over India. They are spicy with dry fruits, butter and other sausages. The tandoori chicken and seekh kabab are fine examples. They are made using tandoors. The tandoors are special ovens which have a pot like structure and charcoal is used to heat and cook the foods. The smoky charcoal smell gives great taste to these North Indian recipes.

 

The tradition of Wazwan in Kashmir follows a cooking style that uses curd, spices and condiments in higher amount. The Awadh style of cooking originated from the Nawabs and the food items are cooked on slow fire to make it crispy. The Punjabi cooking uses butter and ghee in large quantities. Though they are different in different region the normal day to day food of the North Indians consists of roti, rice, lentils and sabji or vegetables. They also love pickles.

 

Panner and other milk products like butter, ghee and cheese and potatoes are used in abundance. Some of the vegetarian North Indian recipes are rajma, Punjabi kadhi, papad sabji, paneer kofta curry, panel makhani, shahi paneer, malai kofta, navratan kurma, green peas masala, mutter paneer, chilli paneer, aloo dum, palak paneer, stuffed aloo, aloo palak, stuffed capsicum, etc. If you should try these items you must first of all know how to make paneer. Boil one liter of milk and add one teaspoon of vinegar or lemon juice to break it. Boil it again so that that the water from the milk will be separated. Tie it in a cloth and hand it till the water is drained. Hard press it to get a square shape and cut into pieces. That is your paneer. With the help of this paneer you can try a variety of North Indian recipes.

 

Some of the non-vegetarian North Indian recipes are seekh kabab, tandoori chicken, gosht biriyani, fish pakora, fish tikka, fried fish, fish curry, patrani machi, tandoori fish, murgh makkanwala, chicken pakora, chicken dilruba, butter chicken, pepper chicken, etc. Some of the North Indian snacks recipes are aloo chutney wala, batura, kachori, puff, tikka items, kabab items, stuffed vegetable, etc.

 

Special dishes are prepared during the celebration of festivals like Diwali, Holi, Id ul Fitr, Baiaskhi and Raksha Bandhan. Sweets are prepared at home and most of them are milk based sweets. Some of the sweets included in the North Indian recipes are rasagulla, sandesh, gulab jamoons, milk peda, rasamalai, basanthi, etc. Kulfi is also very famous. Those who are living in other parts of India should visit North India to enjoy the original taste of these dishes.
