Indian Cooking

 

Indian cooking is based on the aromatic spices and the traditional type of cooking is still carried on in many Indian homes. There are great varieties of dishes in India and many of these dishes are region specific though they are available in all the parts of India. For example you can find North Indian hotels in South India and South Indian hotels in North India. Though the foods cooked at home every day differs, people of India like to eat out during weekends and taste all the cuisines of India.

 

Some of the spices used in Indian cooking are cinnamon, cardamom, cloves, basil, badam, ajwain, bay leaves, amchur, chili powder, coriander powder, mustard seeds, fenugreek, cumin seeds, turmeric powder, etc. Indian cooking is carried out in gas stoves though some make use of ovens, grills, tandoors and induction stoves. The firewood and cow dung are still used as fuel in many Indian villages. The firewood stoves and mud pots give a unique taste to the traditional dishes.

 

To make Indian cooking one would need certain types of equipments. You need mixie with which you can grind the pastes and powder the spices. The grinder is used to make semi liquid battered flour of rice that is needed to prepare idli, dosa and uthappam. As these are the food items found in South India, the grinders are also seen only in South Indian homes. To make idli you need idli pan and to make paniyarams you need paniyaram pan with slots. Tawa is used to make dosa and chapathi. Rolling board and pin has an important place in Indian cooking. You cannot roll a chapathi without these items.

 

For rice varieties you need cup measure because the water is added to rice in a particular proportion. You also need chakli and sev maker, murukku manai for preparing the crispy savory called murukku and idiyappam plate for making idiyappam.

 

Onion, coconut, tomato, ginger, garlic and tamarind along with other spices have a very important place in Indian cooking. There is no cooking in India without at least one of these things. Seasoning adds flavor to Indian dishes. Most of the non-vegetarian varieties make use of ginger or garlic or both. Indian people are wise because the researches reveal that the ginger and garlic helps in the digestion of the non-vegetarian foods.

 

Various flours like rice flour, maida, wheat flour, corn flour, besan flour, etc are widely used in Indian cooking. Together with them the macroni, noodles, semiya, rava, vermicelli and vadagams are also used. When you compare Indian cooking with other types of cooking you may think this to be a bit tough. Indeed it would take more time if you start to cook them from the scratch. But you can find readymade items like garam masala and ginger garlic paste in many Indian homes. If you have these things along with the suitable vessels like pressure cooker, Indian cooking could be done within few minutes. Indian cooking is indeed not a work to be done but an art to be mastered.
