To make tandoori items you need tandoori stove. Only if you have these items in your kitchen you can enjoy the traditional taste, shape and flavor of these dishes.

 

The Indian recipes need the basic pantry ready in hand. Those who are making their kitchen for the first time should equip it with the oils, spices, condiments, staples and other essentials. You must have rice, Bengal gram, dry chilly, spices, turmeric powder, mustard, fenugreek, urid dhal, corn flour, maida, wheat flour, salt, pepper, chilly powder, coriander powder, garam masala, baking soda, asafetida, essence items like vanilla essence, rose essence, pineapple essence, kewra essence, etc., tamarind, pepper, cumin seeds, sauce varieties, ginger, garlic, onion, vinegar, coffee powder, sugar, pappad, cooking oil, semiya, rava, vegetables like carrots, capsicum, radish, cabbage, cauliflower, lettuce, tomatoes, curry leaves, coriander leaves, coconut, etc.

 

The Indian recipes could be divided according to the method of cooking. Kebabs, dry chilly chicken, kaima vada, pappads, bajji, vada, bonda, pakoda and potato chips have to be deep fried in oil. Idli, idiyappam, puttu varieties are steam cooked. Rice is either cooked with pressure cooker or boiled. Potatoes, cakes and puddings have to be baked. Most of the chicken and mutton varieties and fish are roasted in oil. Some are good with microwave method. The method of cooking contributes a lot to the final taste of the Indian recipes.
